Smooth Pineapple Soft Serve

School is out, the temps are rising, and summer is around the corner. I don’t know about you, but I am taking full advantage of the warmer, longer days. But after hours in the sun, it’s nice to cool off with a refreshing treat.

What is Dole Whip?

There are quite a few unique snacks and desserts served in Disney Parks around the world. Dole Whip is a pineapple-flavored dairy-free soft-serve. Make it a float by adding the pineapple soft serve to a cup of pineapple juice or serve a scoop on top of slice of cake.

This pineapple soft serve is a huge hit in my family! It comes together in less than 10 minutes. Just blend all of the ingredients together in a food processor or blender. Enjoy immediately, or place in the freezer for 30 minutes for a more firm, yet perfectly creamy texture.

Ingredients

Frozen pineapple: All the pineapple flavor comes from the real stuff. No funky artificial flavors, syrups, or extracts. You can purchase fresh or frozen pineapple, just be sure to cut and freeze the fresh pineapple before blending.

Coconut milk: Coconut milk adds to the creamy base and keeps Dole Whip thick, yet smooth. If you’re not a fan of coconut milk, whole milk works too!

Coconut sugar: Although pineapples are sweet on their own, we will use a bit of coconut sugar. Raw honey is another great sweetener, though it will subtly change the taste.

Lemon juice: The acidity of lemon juice enhances the flavor of the pineapples and balances out the sugar. Its flavor here is unnoticeable, so don’t be afraid to add it!

Flavors

Because of the simplicity of this dish, there is a bit of wiggle room for customizing it to your liking. My first pick is the classic pineapple, but you can swap pineapple for other fruits.

For a flavor twist, replace the frozen pineapple with an equal weight of frozen fruit—whether it’s strawberries, mangoes, or a blend of the three!

Smooth Pineapple Soft Serve

Equipment

Digital food scale (nice to have)

Food processor or blender

Ingredients

280g frozen pineapple chunks (2 cups)

2oz coconut milk

12g coconut sugar (1 T)

2 t lemon juice

pinch of salt

Instructions

1. Blend. Add the frozen pineapple chunks, coconut milk, coconut sugar, lemon juice, and salt to the bowl of a food processor (or blender). Blend until smooth, stopping when necessary to scrape down the sides. About 2 minutes.

2. Freeze. (optional) Transfer the mixture to a freezer-safe container and freeze for 30 minutes.

3. Enjoy frozen. Scoop and serve immediately.

Store any leftovers in an airtight container in the freezer for up to two months.
